Say YES to Veggies!



                                                       The "ultimate" sandwich 


Everyday Wednesday and Friday around noon, I begin to think about what I can eat for lunch. I always end up choosing between two places, Chiptole or Hale and Hearty. However, today was different. I decided a cold, veggie sandwich would fulfill my hunger on a muggy day like this. And that is when I found the ultimate sandwich for Vegetarian's. This sandwich is extremely easy to mimic and extremely healthy at the same time!



Ingredients:

1 Avocado
2 slices of lettuce
2-3 slices of tomato
Shredded carrots
A few slices of cucumber
Alfalfa sprouts
Shredded red cabbage
Sweet peppers
7-Grain Whole Wheat Bread
Honey Mustard
Balsamic Vinegar

Preparation:

Put a little honey mustard on both pieces of your healthy 7-grain whole wheat bread.Then put a slice of green lettuce on the bottom piece of bread followed by already shredded carrots. After, slice about 4 thin pieces of cucumber and apply them over the carrots. After, put already shredded red cabbage on top, followed by sliced avocado. After, put the alfalfa sprouts on top of avocado, followed by a few slices of fresh tomato. Then top it off with another piece of lettuce and bread! It is important that you make the sandwich this way in order for all the ingredients to stay within the two pieces of bread. If not, the sandwich will get messy, and you will end up eating it with a fork!
